Raw material form :
Sound cloves of garlic (Allium sativum L.). Garlic are washed, peeled, trimmed, sliced or flaked properly.
Dehydrated form :
Garlic flakes, garlic powder. The material, when in the form of powder, is free flowing and free from agglomerates
Colour :
The dehydrated garlic is of white to pale cream colour.
Flavour :
The dehydrated garlic have a marked and pungent odour characteristic of the variety used.
Impurity or contamination :
The dehydrated garlic is free from living insects and moulds, and practically free from dead insects, insect fragments and rodent contamination.
Chemical characteristics :

2. Total ash, percent by mass, Max 5.5
3. Acid-insoluble ash, percent by mass, Max (without any anticaking agents) 0.5
4. Cold water soluble extract on dry basis, percent by mass 70.0 to 90.0
5. Volatile oil content on dry basis, percent by mass, Min 0.3
6. Salmonella, in 25g Absent
Note :
When anticaking agents are present in the dehydrated garlic powder, the maximum limit for acid insoluble ash, percent by mass shall be 2.5.
Packaging :
Inner Packing: Aluminum Foil Bag or poly-bags
Outerpacking: cartons
Storage :
Store in cool and dry place, with the shelf life of 360 days.
